Ingredients
For the Chicken Burgers

1½ lbs ground chicken (thigh meat preferred for extra juiciness)

2 scallions, finely chopped

1 cup shredded cheese (Cheddar, Gouda, or provolone)

¼ cup mayonnaise

½ teaspoon salt

½ teaspoon black pepper
For the Avocado Corn Salsa

1 large avocado, sliced

1 ear fresh corn, husked and silks removed

2 tablespoons chopped fresh cilantro

½ tablespoon olive oil

Juice of ½ lime

Salt and pepper, to taste
Instructions
Make the Chicken Burgers

In a medium mixing bowl, combine the ground chicken, shredded cheese, chopped scallions, mayonnaise, salt, and pepper. Mix until well combined.

Using about ½ cup of the mixture for each, shape the chicken into round burger patties.

Heat an outdoor grill or grill pan over medium heat. Cook the patties for about 5 minutes per side, or until fully cooked through and golden on the outside.
Prepare the Avocado Corn Salsa

Carefully slice the kernels off the corn cob using a sharp knife.

In a medium bowl, combine the corn kernels, sliced avocado, and chopped cilantro.

Drizzle with olive oil and lime juice, then season with salt and pepper. Gently toss to combine.
