Ingredients

For the Chicken Burgers

  • 1½ lbs ground chicken (thigh meat preferred for extra juiciness)
  • 2 scallions, finely chopped
  • 1 cup shredded cheese (Cheddar, Gouda, or provolone)
  • ¼ cup mayonnaise
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Avocado Corn Salsa

  • 1 large avocado, sliced
  • 1 ear fresh corn, husked and silks removed
  • 2 tablespoons chopped fresh cilantro
  • ½ tablespoon olive oil
  • Juice of ½ lime
  • Salt and pepper, to taste

Instructions

Make the Chicken Burgers

  1. In a medium mixing bowl, combine the ground chicken, shredded cheese, chopped scallions, mayonnaise, salt, and pepper. Mix until well combined.
  2. Using about ½ cup of the mixture for each, shape the chicken into round burger patties.
  3. Heat an outdoor grill or grill pan over medium heat. Cook the patties for about 5 minutes per side, or until fully cooked through and golden on the outside.

Prepare the Avocado Corn Salsa

  1. Carefully slice the kernels off the corn cob using a sharp knife.
  2. In a medium bowl, combine the corn kernels, sliced avocado, and chopped cilantro.
  3. Drizzle with olive oil and lime juice, then season with salt and pepper. Gently toss to combine.
