Golden, crispy phyllo rolls filled with tangy feta and creamy ricotta, baked to perfection and finished with a drizzle of sweet and spicy chili honey. These are irresistibly snackable and make the ultimate vegetarian appetizer for parties, brunches, or cozy evenings.

For the Rolls:

  • 8 oz feta cheese, crumbled (use high-quality feta for best flavor)

  • 1 cup ricotta cheese

  • 1 tsp fresh thyme leaves (optional)

  • 6 sheets phyllo pastry, thawed and cut lengthwise to make 12 sheets

  • ¼ cup melted butter or olive oil (for brushing)

For the Chili Honey:

  • ¼ cup honey

  • ½ tsp red chili flakes (adjust to taste)


Instructions

  • Prepare the filling:
    In a medium bowl, combine crumbled feta, ricotta, and thyme (if using). Mix until creamy and well combined. Set aside.

  • Prep the phyllo:
    Unroll the phyllo sheets and cover with a damp kitchen towel to prevent drying. Cut each sheet in half lengthwise to make 12 strips.

  • Assemble the rolls:
    Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
    Place one phyllo strip on a clean surface and brush lightly with butter or oil.
    Spoon about 1 tablespoon of cheese mixture near the short end. Fold in the sides and roll up tightly like a burrito.
    Place seam-side down on the baking sheet. Repeat with remaining phyllo and filling.
    Brush tops with more butter or oil.

  • Bake:
    Bake for 15–20 minutes, or until golden brown and crisp.

  • Make the chili honey:
    While rolls are baking, warm honey in a small saucepan over low heat. Stir in chili flakes and let steep for 1–2 minutes. Remove from heat.

 

  • Serve:
    Let rolls cool slightly. Drizzle with warm chili honey or serve it on the side for dipping. Garnish with extra thyme, if desired.


Notes

  • Keep the phyllo covered while working to avoid drying out.

  • For extra spice, increase chili flakes or add a dash of hot sauce to the honey.

  • Rolls can be assembled ahead of time and refrigerated before baking.

  • Ricotta can be swapped with goat cheese or cream cheese for different flavor profiles.

 

  • Best served warm, straight from the oven with chili honey for maximum wow factor.
