Description

These Sausage French Toast Roll-Ups are a fun and flavorful twist on traditional breakfast favorites! Savory sausage links wrapped in soft, cinnamon-spiced French toast—crispy on the outside, tender on the inside, and perfect for dipping in maple syrup. Great for a cozy brunch or a quick weekday breakfast!

Ingredients

Scale
  • 8 slices sandwich bread (white or whole wheat), crusts removed

  • 8 breakfast sausage links

  • 4 large eggs

  • ½ cup milk

  • 1 teaspoon vanilla extract

  • 1 teaspoon ground cinnamon

  • 1 tablespoon butter (for cooking)

  • Maple syrup, for serving

  • Powdered sugar (optional, for dusting)

Instructions

  • Cook the sausage links according to package directions. Set aside to cool slightly.

  • While sausages are cooking, prepare the bread by trimming off the crusts and using a rolling pin to flatten each slice.

  • In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon.

  • Place one sausage at the end of a flattened bread slice and roll it up tightly. Secure with a toothpick if needed. Repeat with the remaining slices and sausages.

  • Melt butter in a skillet over medium heat.

  • Dip each roll-up in the egg mixture, coating all sides.

  • Place in the skillet and cook until golden brown on all sides, about 3–4 minutes. Remove toothpicks before serving.

  • Serve warm with maple syrup and a dusting of powdered sugar if desired.

Notes

  • Make it healthier: Use turkey or plant-based sausages to lighten it up.

  • Make-ahead option: Prepare roll-ups the night before and refrigerate. Reheat in a skillet or oven before serving.

  • Add-ons: Try adding a slice of cheese or a smear of cream cheese inside the roll for a creamy twist.
