This Chicken Taco Casserole is the perfect comfort food with all the flavors of your favorite tacos, packed into a cheesy, hearty casserole. It’s easy to prepare, customizable, and perfect for feeding a crowd or enjoying as leftovers. Ingredients
- 2 cups cooked chicken, shredded (rotisserie chicken works great!)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies (or plain diced tomatoes)
- 1 cup frozen corn (or fresh)
- 1 package taco seasoning mix (or homemade seasoning)
- 1 cup sour cream
- 1 cup salsa
- 2 cups shredded Mexican blend cheese (or cheddar cheese)
- 6–8 corn tortillas, cut into strips
- 1 tablespoon olive oil (for greasing the baking dish)
- Salt and pepper to taste
- Fresh cilantro or green onions for garnish (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil to prevent sticking.
In a large bowl, combine the shredded chicken, black beans, diced tomatoes with green chilies, corn, and taco seasoning. Stir in the sour cream and salsa until everything is well combined. Season with salt and pepper to taste.
Layer the bottom of the greased baking dish with half of the tortilla strips. Spread half of the chicken mixture on top, then sprinkle half of the cheese. Repeat the layers with the remaining tortilla strips, chicken mixture, and cheese.
Cover the casserole with foil and bake in the preheated oven for about 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
Let the casserole cool for a few minutes before serving. Garnish with fresh cilantro or green onions for a burst of color and freshness. Serve with your favorite taco toppings like guacamole, sour cream, or salsa.
