  • 2 boneless, skinless chicken breasts, sliced into strips
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 2 cups broccoli florets (fresh or frozen)
  • 8 oz fettuccine pasta (or any pasta of your choice)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • Fresh parsley (optional, for garnish)

Instructions

Step 1: Cook the Pasta

Cook the fettuccine pasta according to package instructions. Add the broccoli florets to the boiling water during the last 2-3 minutes of cooking to blanch them. Drain the pasta and broccoli, then set aside.

Step 2: Season the Chicken

While the pasta is cooking, season the chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and pepper.

Step 3: Cook the Chicken

Heat olive oil in a large skillet over medium heat. Add the seasoned chicken and cook for about 5-7 minutes, or until the chicken is cooked through and no longer pink in the center. Remove the chicken from the skillet and set it aside.

Step 4: Make the Alfredo Sauce

In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer and let it cook for 2-3 minutes.

Step 5: Combine the Ingredients

Stir in the Parmesan cheese and cook the sauce for another 2-3 minutes until it thickens. If the sauce is too thick, add a splash of chicken broth or pasta water to loosen it up. Add the cooked chicken, pasta, and broccoli to the skillet, tossing everything together until well coated in the sauce.

Step 6: Serve

Once everything is combined and heated through, remove from heat. Garnish with fresh parsley if desired and serve immediately.
